Grown at La Miel Farm in Colombia's Tolima Department, this coffee is processed just across the road at the Casa Blanca station under the careful supervision of Felipe Ospina, a microbiologist and certified Q Processing Instructor.
The key to its rich flavor lies in the "Naturals House," a specialized drying facility at Casa Blanca. The floor is lined with rice husks, which absorb heat during the day and release it slowly at night. This stabilizes temperature and humidity, allowing the coffee beans to dry evenly and consistently.
Upon tasting, a tropical sweetness immediately unfolds. Juicy pineapple leads, followed by the bright acidity of pink grapefruit, and a lingering nuance of sweet strawberry. The acidity is refined and delicate, with a smooth mouthfeel and a refined, floral finish.
