We are proud to introduce an exceptional lot from Las Flores, the acclaimed farm of Johan Vergara located in Huila, Colombia. Known for his innovative approach to fermentation and drying, Johan continues to push the boundaries of flavor in specialty coffee. Since 2006, his family has transformed Las Flores into a farm synonymous with cutting-edge processing and rare cultivars like Sidra, Wush Wush, and Pink Bourbon.
This particular Bourbon Sidra Anaerobic Washed lot underwent a meticulously designed two-stage fermentation: first, a 24-hour dry fermentation in whole cherry form, initiating enzymatic activity. The cherries were then placed into GrainPro bags and kept at low temperature, extending the bacterial fermentation phase and concentrating lactic acid, which enhances both clarity and complexity in the cup.
Once pulped and gently washed, the coffee was dried on raised beds—ensuring a clean, vibrant profile that expresses the creaminess of Sidra, paired with floral clarity reminiscent of lemon myrtle. On the palate, you’ll find a standout harmony of juicy peach, sweet plum, and bright starfruit—a tropical yet structured profile that lingers with elegance.
This is a remarkable example of how precise processing can elevate an already exotic cultivar into something extraordinary. We selected this lot for its layered complexity and distinctive texture. We hope you’ll enjoy this coffee as much as we did on the cupping table.
