This lot comes from Finca Las Mañanitas, located in Urrao, Antioquia, where the Chiroso variety is believed to have originated. The process begins with a 24-hour aerobic fermentation in whole cherry, followed by depulping and an additional 72 hours of controlled oxidation. The washed method enhances clarity and structure, allowing the Chiroso's elegant flavors to shine. The result is a refreshing and expressive cup with excellent balance and purity.
Danilo, the young producer who recently took over the farm, represents a new generation of Colombian coffee growers. During a cupping session in Urrao, his coffee stood out for its clarity and floral aroma, delivering a refined experience despite its fresh harvest timing.
