This microlot from Colombia is produced in Palestina, a town in the southern part of the country where exceptional terroir and passionate producers are shaping a new reputation in specialty coffee. While Colombia’s classic origins are often referred to as the “Coffee Triangle,” Palestina is increasingly recognized as an emerging cornerstone of quality-driven coffee production.
This lot features SL28, a renowned Kenyan variety now cultivated in Colombia, celebrated for its vibrant acidity and juicy fruit expression. After a carefully controlled anaerobic fermentation, the coffee is dried as a natural process with the fruit still intact, developing depth and sweetness on African raised beds.
In the cup, the profile is bold yet refined: the aroma opens with a rich, fermented sweetness reminiscent of rum, followed by a tropical pineapple-like juiciness that adds brightness and lift. The finish is layered with cacao nib notes, bringing depth and a gentle bittersweet complexity. Despite its expressive anaerobic character, the cup remains clean, structured, and elegantly balanced.
