One of the defining traits of this dazzling lot is its Pink Bourbon variety, a rare natural mutation discovered in Colombia, named for the soft pink hue of its ripened cherries. The variety is prized for its lively, juicy sweetness and delicate, fruity elegance.
This lot also features a standout post-harvest technique known as Thermal Shock Washed, a modern innovation gaining attention throughout Colombia. This method begins with a standard washed process, but introduces a rapid temperature shift during the fermentation and rinsing stages. The result is a cup that retains clean clarity, but reveals brighter acidity and layered complexity not commonly found in traditional washed coffees.

Blind Assessment
Radiant, lyrically complex. Tangerine, gardenia, lychee, white tea, and sugarcane in aroma and cup. Crisp, sparkling acidity; voluptuously silky body. The finish is long, floral, fruit-layered and resonant.
