This coffee comes from El Paraiso in Cauca, Colombia, at 1,960 metres. Processing begins with a 12-hour fermentation of whole cherries. After depulping, liquid pulp extract is added for a further 48-hour fermentation. The coffee follows a washed process incorporating fermentation and thermal shock.
