Colombia Alto de Las Estrellas Anaerobic Natural is a coffee with both brightness and depth. Raspberry brings a juicy lift, passion fruit adds an aromatic tropical character, and lemon candy gives the cup a lively, sweet-tart finish. Together, these notes create a profile that feels vivid while remaining composed.
This coffee comes from Alto de Las Estrellas in San José de Albán, Nariño, produced by Ignacio Martinez. The farm sits at 1,900 metres, where volcanic soils and abundant equatorial sunlight support slow fruit development and concentrated flavour.
The lot combines Caturra and Castillo varieties and is processed as an anaerobic natural. The coffee cherries are fermented in a low-oxygen environment before being dried slowly over an extended period. This process builds complexity and sweetness while preserving a juicy, fruit-driven character.
At SÖT COFFEE, we roast this lot light to keep its expression precise and open. The cup begins with the bright aromatics of raspberry and passion fruit, followed by the playful sweetness of lemon candy. As it cools, the profile becomes rounder, revealing a softer ripe-fruit sweetness and a smooth mouthfeel.
Though the process is distinctive, the coffee remains easy to follow. It is expressive without becoming heavy, with clarity that carries through to the finish. Take a little time with it and allow the fruit, sweetness, and texture to unfold naturally.
