We have been working with David Bedoya of El Origen in recent years with his outstanding crops. Bringing together six farms developed by the Bedoya family over five generations, it respects the character of each variety and growing site. Alongside traditional cultivation, the team explores experimental fermentation while pursuing quality and sustainability. Its “Shared Origen” philosophy reflects a commitment to working with roasters and building a shared connection to the origin.
Mandarine Azahar is an infused-process lot that incorporates an aroma reminiscent of orange blossom. Ripe cherries are selected and depulped, then placed in fermentation tanks with their mucilage intact. Food-grade oil carrying an Azahar aroma profile and sugar are added before approximately five days of anaerobic fermentation. The coffee then dries on raised African beds, with moisture levels checked throughout. The addition of aromatic ingredients during fermentation is a defining feature of this lot and an essential part of understanding its distinctive floral character.
Our light roast presents an expressive orange blossom aroma, followed by juicy fruit notes reminiscent of white grape. Gentle lychee-like sweetness adds another layer to the cup, bringing the floral and fruit impressions together. Expect a fragrant, elegant coffee that combines a pronounced blossom aroma with refreshing fruit character and soft sweetness.
