Finca El Mirador is the farm of Elkin Ferney Guzman Vargas in Huila, southern Colombia, and it has become one of the standout names behind Colombia’s more experimental specialty lots. Elkin comes from a family deeply connected to coffee, and that long background in cultivation is paired with years of focused work on post-harvest processing. At El Mirador, he grows a wide range of varieties including Catiope, Mokka, Tabi, Gesha, multiple Bourbon lines, and Caturra. What makes the farm especially compelling is not only the diversity of varieties, but also the way each lot is treated as its own project, with processing methods chosen to highlight the character of the cultivar rather than following a single formula.
This lot is defined by Elkin’s Pink Champagne Washed process. Cherries are selected at high ripeness, with sugar content measured above 20 degrees Brix, then floated and hand sorted to remove defects and overripe fruit. After depulping, the coffee is macerated with a culture fermented with fruits and spices, then held in sealed tanks for about 140 hours. That process gives the lot a profile that is far more aromatic and layered than a conventional washed coffee while still keeping a sense of structure and clarity. The drying stage is also carefully extended, helping preserve sweetness and definition rather than letting the ferment character become too heavy.
In the cup, the profile you gave fits this coffee very naturally. Strawberry leads with a juicy red-fruit sweetness, followed by the brighter, more lifted acidity of passion fruits. White wine adds a refined fermented quality, giving the cup a sparkling and elegant edge rather than a heavy one.
