YUAN YI YUAN Coffee Farm is situated in Dehong, Yunnan, China. At elevations of 1,400–1,580 metres, it grows 7963, also known as Catimor P4, a variety adapted to Yunnan’s growing conditions. Since 2023, Japanese coffee importer MOUNTAIN MOVER has been directly involved in farm operations, working to improve cherry quality and refine fermentation. Collaboration with the Dehong Tropical Crops Research Institute also supports research into cultivation and processing, contributing to the development of specialty coffee from Yunnan.
This lot features 150 hours of submerged fermentation with yeast selected for coffee processing. The harvested cherries ferment with the yeast before being depulped, washed, and dried. This sequence combines extended yeast fermentation with a washed finish, bringing together expressive aromatics and a clean aftertaste. The washing stage is an important part of this particular lot’s processing and its presentation in the cup.
Our light roast reveals a fragrant lychee impression alongside the delicate, juicy fruit character of white peach. A mellow sweetness reminiscent of brown sugar adds depth, gently rounding out the brighter fruit notes. Together, these flavours offer an inviting balance of aromatic fruit and soft sweetness. It is a coffee to enjoy slowly, taking time to appreciate how its lychee fragrance, peach-like fruit character, and brown sugar sweetness come together in each cup.
