Panama Don Eduardo Geisha Symmetry CM Natural is produced at Don Eduardo Estate in El Salto, Boquete, Chiriquí, at an elevation of approximately 1,850m. Producer Harold Sabin, known as part of Savage Coffees’ award-winning team, has over a decade of experience leading their production and has cultivated green-tip Geisha planted in 2017 with exceptional precision.
This lot combines a Natural process with Carbonic Maceration (CM), using controlled CO₂ fermentation to enhance the Geisha variety’s floral intensity and fruit structure. It represents one of the more refined expressions within Savage Coffees’ innovative processing approach.
A light roast highlights bright citrus acidity, honey-like sweetness, and elegant jasmine aromatics, delivering a clean, transparent cup with a long, graceful finish.
