Ripe cherries are selected and depulped, then placed in fermentation tanks with their mucilage intact. Food-grade oil carrying an Azahar aroma profile and sugar are added before approximately five days of anaerobic fermentation. The coffee then dries on raised African beds, with moisture levels checked throughout. The addition of aromatic ingredients during fermentation is a defining feature of this lot and an essential part of understanding its distinctive floral character.\u003c\/p\u003e\n\u003cp\u003eOur light roast presents an expressive orange blossom aroma, followed by juicy fruit notes reminiscent of white grape.
